Investigation of "Mushy Tail" (New Summer 2008)

In association with processing partners this project will examine possible causes of ‘mushy tail’ in lobsters.  Tails of lobsters affected with this condition become very soft (hence the term ‘mushy tail’) after cooking.  "Mushy Tail" Fact Sheet The anticipated start date for this project is August 2008.
